The Bartender: Kewpie Lee
With
her impish smile and eyes, Kewpie Lee looks a lot like the doll
she gets her name from. Thus, some customers are surprised when
they discover that this petite woman is a powerhouse behind the
bar, with years of experience mixing drinks at establishments like
TGI Friday's, fM, Riverside, and Warung Didi's in Kenting.
| Currently
bar supervisor at the Chili's Taichung branch, Kewpie
decided to introduce COMPASS to her bar's trademark drink,
the Presidente Margarita. As she stresses, this is no
ordinary margarita, thanks to the use of top-shelf tequila
and other ingredients like the brandy. "The brandy
is special and makes the tequila more smooth and much
better. This drink is popular with with Taiwanese who
like salty drinks like vodka lime. During hot weather,
it also helps your apetite." She also enjoys making
this drink: "I like the song of the ice cubes when
I shake this drink to the music. It's fun." |

Ingredients:
1.25
ounces tequila (100% Blue Agave)
0.5 ounce Cointreau
0.5 ounce brandy
3 ounces Chili's sweet & sour mix (or mix 1.5 ounces
fresh lemon juice with 1.5 ounces liquid sugar)
A splash of Rose's lime juice
Put the tequila in the shaker and mix in the Cointreau,
brandy, sweet & sour mix and lime juice. Add ice cubes
and shake. Prepare a martini glass with a salt ring and
ice cubes. Strain drink into the glass and add a lemon
wedge on the side. |
